Simple muffin recipe with yummy chocolate chips!

This basic chocolate chip muffin recipe is a classic and something you must make at some point! Using practical ingredients and delicious chocolate chips, these yummy muffins are easy to make and amazing to eat! Plus, this recipe makes plenty to go around so you'll be the favourite for sharing!
My Notes:
I love chocolate chip muffins and what I find so great about this recipe is how simple and straightforward it is. It takes less than 15 minutes to whip up and you can swap out the chocolate chips for anything you like including nuts or dried fruit. This makes it a really flexible muffin recipe that is perfect for last minute visitors!
Serves: 15 Muffins
Prep Time: 15 Minutes
Cooking Time: 20 -25 Minutes

Ingredients:
2 Eggs, Beaten
125ml Vegetable/Sunflower Oil
250ml Semi-Skimmed Milk
250g Golden Caster Sugar
400g Self-Raising Flour
1 tsp Salt
100g Chocolate Chips/Chunks
Method:
Preheat the oven to 200°C/180°C fan/gas mark 6. Line 2 muffin tins with 15 muffin cases.
In a bowl combine the beaten eggs, oil and milk and beat until combined.
Mix in the sugar and mix well.
Sift in the flour and salt and mix until you have a smooth batter with no lumps.
Stir in the chocolate chips.
Fill each muffin cases about 2/3 with the batter.
Bake in the oven for 20-25 minutes until golden on top. Check by inserting a skewer - if it comes out clean then it's ready.
Leave to cool slightly before transferring to a wire cooling rack.

My Tips:
Make sure you don't over mix your ingredients as this will make the muffins tough. For the perfect muffin, mix the ingredients until they are all combined and the mixture is no longer lumpy.
If you don't want to use chocolate chips, try swapping them out for something else such as nuts or dried fruit for a healthier muffin recipe.
Make sure you don't overfill your muffin cases as otherwise they'll spill over the side and look messy. For the ideal muffin, fill the cases around 2/3 full as this gap allows room for them to rise.
