Strawberry Jam Thumbprint Cookies

Soft buttery shortbread biscuits with a fruity jam centre!


Also known as jam drops and hallongrotta, thumbprint cookies are a type of shortbread cookie that you make a small hole in the middle to put a filling. This strawberry jam thumbprint cookie recipe is super easy to make and requires only simple ingredients. It's also ideal for baking with friends and family and kids will love rolling the dough and making the hole to fill with jam!

 

My Notes:


This easy thumbprint cookie only took me around 15-20 minutes to make and is a great sharer! Making around 12-15 with each batch, it's perfect for having friends round or for a quick party snack. I used strawberry jam for this recipe as it's my personal favourite, but you can use any kind of jam you like and I've even seem some with chocolate!

 

Serves: 12-15 Cookies

Ingredients:


200g Butter/Stork

200g Caster Sugar

320g Plain Flour

1 Egg

1 tsp Vanilla Extract

1/2 tsp Baking Powder

Pinch Salt

30-50g Strawberry Jam



 

Method:

  1. Preheat the oven to 180°C/160°C fan/gas mark 4. Line 1/2 (depending on size) baking trays with baking paper.

  2. Cream together the butter/stork and sugar then add the vanilla extract.

  3. Beat the egg then add to the mix.

  4. Sift in the flour, baking powder and salt and carefully fold in until fully combined.

  5. Roll the dough into balls about the size of a gold ball and place on the baking tray(s). Make sure to leave room around each one for them to spread.

  6. Use your thumb to press a small hole in the middle of each ball of dough.

  7. Fill the hole with 1/3-1/2 tsp strawberry jam or until full.

  8. Bake in the oven for around 15 minutes or until lightly golden round the edges.

  9. Leave to cool slightly on the baking tray before moving to a wire rack.

  10. Enjoy!

 

My Tips:

  1. I used 1 medium tray and 1 large tray to make these, but you may need more or less depending on what trays you have and the size of your oven.

  2. The balls of dough may look small when you make them, but they will spread to over double the width in the oven so make sure to leave plenty of room around each one!

  3. You can use any kind of jam you like in this recipe and add as much or as little into the hole as you like.

  4. If you want to make more or less, simply double or half the recipe!
