Vanilla Cupcakes

Simple cupcake recipe that makes the perfect base for your fun creations!

Vanilla cupcakes are one of my all time favourites and are so easy to make. Plus, you can customise them and top them however you like! I enjoy trying different flavours and colours of butter icing as well as adding my favourite: sprinkles!
Serves: 12 Cupcakes
Prep Time: 15 Minutes
Cooking Time: 20-25 Minutes
Allergies: Contains Dairy & Eggs

Ingredients:
4oz/110g Margarine/Butter
40z/110g Caster Sugar
2 Eggs
1 tsp Vanilla Extract
4oz/110g Self Raising Flour
Method:
Pre-heat the oven to 190°C/Gas 5 and arrange your cupcake cases in a tray.
Cream together the margarine and sugar until light and fluffy.
Beat the eggs then add gradually stir in to the margarine and sugar mix.
Mix in the vanilla extract.
Add in sieved flour and fold in.
Pour the mixture into the cupcake cases so that they're around 3/4 full.
Bake for 20-25 minutes (depending on your oven) and enjoy!

My Tips:
- Make sure to cream together the butter and eggs first so that they mix better with the rest of the ingredients.
- Sieving the flour makes it a lot easier to mix as it's less lumpy!
- Add whatever type of icing you like on top and decorate as you please!
