The perfect blondie brownie made with brown sugar and white chocolate!

Named for being a 'blonde' version of the classic brownie, blondies are a delicious treat and a great twist if you want to try something a bit different. Unlike brownies which are made with cocoa powder and dark chocolate, blondies are made using brown sugar to get the delicious caramel-like flavour and white chocolate chunks. They're just as easy to make as regular brownies and are a simple way to whip up a yummy treat!

I love a good brownie and these blondies also hit the spot! I love this recipe as it is so simple to make and the ingredients aren't complicated or expensive to buy. For this blondie recipe, you only need 1 bowl to mix everything together and you can use the same baking tin as with a brownie recipe - how easy is that! For these blondies, I like to use white chocolate chips both inside and sprinkled on top for a deliciously chocolatey hit!

Ingredients:
170g Butter/Stork
200g Light Brown Soft Sugar
150g Granulated Sugar
2 Eggs
2 tsp Vanilla Extract
1tsp Baking Powder
250g Plain Flour
1/2 tsp Salt
100-200g White Chocolate Chips (As Preferred)
Method:
Preheat the oven to 180°C and line a baking tray (9x9 inch) with baking paper.
Melt the butter and mix with the brown and white sugars.
In the same bowl, add the eggs and vanilla extract and mix well.
Carefully sift in the baking powder, flour and salt and fold in until combined.
Add in around half of the white chocolate chips.
Pour the batter into the lined tray and even out. Sprinkle the remaining chocolate chips on top.
Bake in the oven for around 25-30 minutes until lightly browned and firm to touch.
Transfer to a cooling tray and leave to cool before cutting into slices.

Tips:
You can use a different sized baking tray if you prefer, just make sure you slightly adjust your baking times if the batter is spread out thicker or thinner.
You can use all white sugar if that is all you have, but I would suggest using the soft brown sugar as this gives it the caramel flavour and colour.
I have put in the recipe to add 100-200g of white chocolate chips. This is because it depends on how much you want in your mixture, so it is up to you!
If you don't have any white chocolate chips, grab a bar of white chocolate and chop it up into chunks!
If you prefer, you can add all the chocolate chips straight into the mixture, but I like to do half in the mix and half on top to make them look their best.
This should make around 12 blondie slices or 24 if you want them a bit smaller, however, you can cut them into and size and quantity you want.
