Mint Aero Rocky Road

Classic rocky road with a deliciously minty twist!

If you like rocky road and Mint Aero chocolate, then this is the best treat for you! Combining Mint Aero into this classic rocky road recipe is so easy and really takes it up a notch! It's also quick and simple to make and doesn't require any baking so is great for making with kids (with some adult supervision, of course). Plus, you can mix up the recipe how you like and tailor it to your preferences.

Rocky road is an absolute classic and there are so many ways that you can make it your own! My favourite is with Mint Aero as it gives it a mint chocolate kick that goes perfectly with the marshmallows and biscuits inside. I found this recipe really easy to follow and uses simple ingredients that you can find in the supermarket. I also like to alter the ratio of ingredients to make more or less depending on how many people I'm sharing it with or how big I want the slices to be - it's so versatile!

 

Serves: 20 1x1 Inch Pieces

Ingredients:


200g Milk Chocolate

60g Butter/Stork

60g Golden Syrup

75g Mini Marshmallows

75g Digestives

150g Mint Aero Bar

100g White Chocolate

50-100g Mint Aero Balls

Green Food Colouring



 

Method:

  1. Line a tin or food-safe box (7x9 inch) with baking paper.

  2. In a pan, bain-marie or the microwave, slowly melt together the chocolate, butter and golden syrup, making to sure to stir well so all the ingredients combine.

  3. Once they are completely melted, set this mixture aside to cool for 5-10 minutes.

  4. In the meantime, chop or break up your digestive biscuits and Mint Aero (if preferred).

  5. Add the mini marshmallows, broken digestive biscuits and Mint Aero into the chocolate mixture and combine so the ingredients are all covered.

  6. Pour the final mixture into the tin or box and evenly spread out with a spatula or the back of a wooden spoon.

  7. Place in the fridge for 1-2 hours to set.

  8. After a few hours, if the rocky road mix is solid on top, you can make the green topping.

  9. For the topping, melt the white chocolate in a pan, bain-marie or microwave.

  10. Add the green food colouring to achieve your desired colour.

  11. Either drizzle or spread the green chocolate in a layer over the top of the rocky road.

  12. Add crushed Mint Aero Balls to decorate.

  13. Place the completed mixture back in the fridge for another 1-2 hours (or overnight) to fully set.

  14. Cut into your desired size of pieces.

  15. Enjoy!

 

Tips:


  1. You can use whatever size tin or food-safe box you prefer, it will just alter the overall size and thickness of your rocky road pieces. I usually aim for around an inch thick.

  2. You can easily melt the chocolate, butter and golden syrup in the microwave, however, I would suggest using a pan as this means you can slowly melt all the ingredients and mix at the same time so you don't risk burning the chocolate.

  3. When chopping up the digestives and Mint Aero Bar, it is up to you the exact size of the pieces. You can even leave the Aero in whole pieces if you prefer! Plus, you can also use Mint Aero Balls or a mixture of the two.

  4. It is really important that you don't skip step 3! If you don't leave the mixture to cool enough, when you add the mini marshmallows, digestives and Mint Aero, they will just melt into the mixture and the biscuits will get soggy! By leaving it to cool, you get the distinctive pieces and textures throughout.

  5. For the green topping, you can really make this your own! I like to spread a layer of the green chocolate over the top and then add crushed Mint Aero Balls, but you can make a cool design or drizzle the chocolate in any way you like! You can also skip this all together, but I think it adds to the mint flavour and the green really makes it look great!

  6. You can cut your rocky road in any way you like! I personally like to cut them into around an inch squared pieces for myself (20-25 pieces), or 1x2 inch for sharing with others (10-12 pieces). You can easily make them bigger or smaller - it's up to you!

  7. The excellent thing about this recipe is that you can make more or less depending on your need! Simply half or double (or more!) the ratio of ingredients to make the amount you want.
