Bright and colourful rocky road with a chocolatey bite!

Make your rocky road super fun and colourful with this smarties rocky road recipe! Made with the classic rocky road ingredients including chocolate, mini marshmallows and digestive biscuits, this exciting recipe adds a pop of colour into the mix and all over the top with the addition of smarties!

My Notes:

I love smarties and I thought they'd made a great addition to some rocky road! I always enjoy adding extras to my rocky road (try my mint aero rocky road or orange aero rocky road recipes) and smarties became the next obvious choice. This recipe is great as it makes just the right amount for a few people, but you can easily make more if you want to share!

Serves: 12 Pieces

Prep Time: 20 Minutes

Cooking Time: 0 Minutes (1-2 hours for setting)

Allergies: Contains Dairy & Gelatine (marshmallows)

Please note these are only rough nutritional facts and will depend on the specific ingredients used.

Ingredients:

275g Milk Chocolate

60g Golden Syrup

60g Butter/Stork

75g Mini Marshmallows

75g Digestive Biscuits

150g Smarties

Method:

  1. Line a tin or food-safe box (7x9 inch) with baking paper.

  2. In a pan or microwave, slowly melt together the chocolate, butter and golden syrup, making sure to stir well so all the ingredients combine.

  3. Once they are completely melted, set this mixture aside to cool for 5-10 minutes.

  4. In the meantime, chop or break up your digestive biscuits into chunks.

  5. Add the mini marshmallows, broken digestive biscuits and 100g of the smarties into the chocolate mixture and combine so the ingredients are all covered.

  6. Pour the final mixture into the tin or box and evenly spread out with a spatula or the back of a wooden spoon.

  7. Add the remaining 50g of smarties on top. Press down into the mix slightly to make sure they stick.

  8. Place in the fridge for 1-2 hour or until fully hardened to set.

  9. Cut into equal pieces (usually 12).

  10. Enjoy!

My Tips:

  1. You can use whatever size tin or food-safe box you prefer, it will just alter the overall size and thickness of your rocky road pieces. I usually aim for around an inch thick.

  2. You can easily melt the chocolate, butter and golden syrup in the microwave, however, I would suggest using a pan as this means you can slowly melt all the ingredients and mix at the same time so you don't risk burning the chocolate.

  3. When chopping up the digestives, it is up to you the exact size of the pieces. I like mine in bigger chunks so you can see them better!

  4. It is really important that you don't skip step 3! If you don't leave the mixture to cool enough, when you add the mini marshmallows, digestives and smarties, they will just melt into the mixture and the biscuits will get soggy! By leaving it to cool, you get the distinctive pieces and textures throughout.

  5. You can cut your rocky road in any way you like! I personally like to cut them into around an inch squared pieces (10-12 pieces). You can easily make them bigger or smaller - it's up to you!

  6. The excellent thing about this recipe is that you can make more or less depending on your need! Simply half or double (or more!) the ratio of ingredients to make the amount you want.

  7. If you want to give this recipe a go, but you don't like smarties, why not try a different flavour? Why not try my Mint Aero Rocky Road recipe or use any other chocolate of your choice!
