3-Ingredient Coconut Truffles

The easiest coconut truffles made with only 3 simple ingredients!

Truffles are a great gift or the ideal weekend treat, but some are so difficult and expensive that it's not worth making them from scratch! This 3-ingredient coconut truffle recipe, however, is so simple and really fast to make! Made with just 3 store cupboard ingredients, desiccated coconut, sweetened condensed milk and almonds, this homemade truffle recipe will quickly become a standby favourite!
My Notes:
I really love this homemade treat recipe as it is so simple and easy to make! I always have left over sweetened condensed milk when I make other recipes, so I like making these to make full use of my ingredients! Sometimes I don't even put the almond in the middle, so is even easier! Plus, I always have desiccated coconut in my cupboard, so this recipe is a quick last-minute treat for me!

Ingredients:
135g Desiccated Coconut
160ml Sweetened Condensed Milk
10-15 Almonds
Method:
Mix together 90g desiccated coconut and all the sweetened condensed milk until fully combined.
With your hands press and roll the mixture into small balls with a single almond in the middle. This should make around 10-15 truffles depending on size.
Pour the remaining desiccated coconut into a bowl and roll each ball in the coconut until it's no longer sticky.
Keep in the fridge and enjoy!

My Tips:
The coconut and condensed milk mixture gets very sticky, so take your time when creating the balls! I find it easier to press them into balls instead of rolling as you need to make them firm to stick together properly.
Make sure the balls are completely covered in dry desiccated coconut before serving, otherwise they will be really sticky and messy!
It doesn't matter too much the specific size or shape of the balls - if they're not perfect spheres that's okay!
If you don't like almonds, that's fine! You can try a hazelnut in the middle or just leave the nut out completely.
One of the best thing about this recipe is that as you don't have to worry about cooking times, it doesn't matter if you make a different amount! If you have a different amount of ingredients available, why not try halving or doubling the recipe!
Keep these in the fridge for up to about a week for best results.
