Cherry, Coconut & White Chocolate Traybake

A quick and easy recipe that is sweet and delicious!

This simple traybake is quick to prepare and uses easy to get hold of baking ingredients. Great for coconut lovers, this traybake recipe combines desiccated coconut with the tempting flavours of cherry and white chocolate for delicious slices that are perfect for sharing!

 

My Notes:


I love coconut, cherry and white chocolate so this combination is heaven for me! This traybake recipe has become one of my favourites as it's so easy to make - simply combine all the ingredients in 1 bowl, spread out in a baking tray and cook! Plus, these flavours are amazing and it's great for baking then eating later!

 

Serves: 15 Pieces

Prep Time: 20 Minutes

Cooking Time: 20 Minutes

Ingredients:


200g Desiccated Coconut

85g Caster Sugar

2 Eggs, Beaten

200g White Chocolate

100g Glace Cherries





 

Method:

  1. Preheat the oven to 180°C/160°C fan/gas mark 4 and line a baking tray (20x30cm) with baking paper.

  2. In a bowl, combine the desiccated coconut, caster sugar, beaten eggs and cherries.

  3. Chop the white chocolate into rough chunks and mix into the rest of the ingredients.

  4. Once all the ingredients are combined, pour the mixture into the lined baking tray and evenly spread out. Press down slightly and ensure it is level.

  5. Bake in the oven for 15 minutes or until slightly golden on top.

  6. Leave to cool in the tin before transferring to a wire cooling rack.

  7. Cut into 15 even pieces.

  8. Enjoy!

 

My Tips:

  1. You can use a different sized baking tray if needed, just remember that it may change the thickness of the traybake and the cooking time.

  2. It doesn't matter if the white chocolate is not all the same when chopped - it's good to have variation!

  3. I like to cut my traybake into 15 even pieces, however, you can cut them into as many as you like!
