Delicious carrot cake recipe with fresh cream cheese icing!

I love a good carrot cake and this is my favourite recipe! I've tried a few and it was never quite right, so I'm so happy to have perfected this one! It does take a bit more effect to grate the carrots, but it is worth it for a moist and tasteful cake thats yummy with or without the icing!

Ingredients:
Cake:
225ml/8fl oz Vegetable Oil
200g/2oz Plain Flour
1 tsp Bicarbonate Of Soda
2.5 Eggs
1/2 tsp Salt
1 1/2 tsp Ground Cinnamon
215g Grated Carrots
75g Chopped Walnuts (Optional)
Icing:
50g Butter/Margarine
150g Icing Sugar
50g Soft Cheese

Method:
Preheat the oven to 160°C/Gas 3.
Mix together all the ingredients in a bowl except the carrots and walnuts.
Add the carrots and optional walnuts.
Pour into 2 pre-lined cake tins and bake for around 45-60 minutes (depending on your oven).
Remove from the oven and place on a cooling rack to cool.
Once cool, create the icing by mixing together the butter, icing sugar and soft cheese.
Spread around 1/3 of the mixture onto the bottom layer and the remainder onto the top.

My Tips:
Make sure to grate the carrots using the smallest part of your grater so that you don't end up with big lumps.
You can also add sultanas as an optional extra to your cake mix or swap them out with the walnuts.
If your cream cheese icing is a bit runny, add a bit more icing sugar to thicken it up.
If you like more cream cheese icing on your cake, try doubling the mix!
Top with your choice of decorations - I like topping with ground cinnamon or sugar carrot decorations!
