Simple chickpea power balls for a healthy energy boost!

Do you want to try a treat that tastes good and is actually healthy? Then you must try this chickpea protein ball recipe! Based around the super healthy chickpeas, this power ball recipe is packed full of beneficial nutrients and is a great vegetarian protein-filled snack. As a result, it is great to give you boost during the day or if you're into exercise. It's also perfect if you fancy a snack but want to be good to your body. Plus, it also tastes amazing!

My Notes:

This recipe is great as sometimes you're hungry throughout the day, but don't want to turn to chocolate or sugar. This chickpea protein ball recipe contains no added sugar and is made from natural-based ingredients. One of my favourite parts is the peanut butter as I always love a nutty flavour. You can also swap it out with any nut butter you like to tailor it your preferences. Plus, its only around 80 calories per ball, so won't make a big dip in your daily diet! You can also swap out the honey for a

other sweeteners for a vegan protein ball recipe!

Serves: 10 Balls

Prep Time: 15 Minutes

Cooking Time: 0 Minutes

Allergies: Contains Nuts & Honey

Please note these are only rough nutritional facts and will depend on the specific ingredients used.

Ingredients:

300g Can Chickpeas (180g Drained)

45g Ground Almonds

30g Peanut Butter (Crunchy or Smooth)

1tbsp Honey

1 tsp Vanilla Extract

Method:

  1. Drain the canned chickpeas and place into a blender or food processor.

  2. Blend the chickpeas until they reach a smooth consistency.

  3. Place the remaining ingredients (ground almonds, peanut butter, honey and vanilla) into the blender/food processor and blend until completely combined.

  4. Roll the mixture into even balls (around 1 tbsp each) and place on a plate or tray lined with greaseproof paper.

  5. Place in the fridge to harden for 1-2 hours.

  6. Enjoy!

My Tips:

  1. If you have a powerful blender or food processor, you can place all the ingredients in at once and blend, however, I find it best to blend the chickpeas first, then add the remaining ingredients.

  2. For this recipe, you can use either crunchy or smooth peanut butter, it is totally up to your personal preference. You can also switch with other types of nut butters if you prefer, such as almond or cashew. Additionally, you can use any type of honey you like!

  3. As you don't need to bake these chickpea protein balls, you can roll them into any size you like, big or small!

  4. As these protein balls don't contain any carbs, they are keto-friendly! They are also suitable for vegetarians, however, not vegans due to containing honey.

  5. As an optional extra, once you have rolled the mixture into balls, you can roll them into an additional topping for some extra flavour. Why not try cocoa powder, desiccated coconut or crushed pistachios!
