A healthy savoury snack that's packed full of nutrients!

This easy roasted chickpea recipe is quick to prepare and makes the perfect mid-day snack! For those of you already on the chickpea bandwagon, you'll know how good for you they are, but for those if you who are new to the food, you'll definitely want to give them a try! Chickpeas are a rich source of both vitamins and minerals and are also high in fibre and protein. This makes this homemade roasted chickpea recipe a great vegan or vegetarian snack and is great if just want to add some simple nutrition to your day!

I have recently been discovering the benefits of chickpeas and this has become my favourite chickpea recipe. I've always been love it (hummus) or hate it (plain in a salad) with chickpeas, but this recipe is one I actually enjoy and find it a perfect snack for between meals or instead of popcorn or sweet when watching a film. Plus, what is great about this recipe is that you can change up the herbs and spices to tailor it to your tastes!
Serves: 3 Servings
Prep Time: 5 Minutes
Cooking Time: 35 Minutes

Ingredients:
400g Can Chickpeas
1 tsp Vegetable/Sunflower Oil
1 tsp Ground Cumin
1 tsp Chilli Powder
1 tsp Smoked Paprika
1 tsp Ground Coriander
Salt & Pepper To Taste
Method:
Preheat the oven to 180°C/160°C Fan/Gas Mark 4.
Drain the chickpeas then pour into a bowl.
Add the oil, cumin, chilli, paprika and coriander and mix well until the chickpeas are fully covered.
Pour onto a baking tray and bake in the oven for 35 minutes. Shake the tray slightly halfway through to ensure they are evenly cooked.
Remove from the oven and leave to cool.
Enjoy!
My Tips:
This recipe is super versatile and if you want to change up some of the spices you can! If you like things a bit more spicy, add some extra chilli powder or if you like less remove it all together. You can also use some fresh herbs and spices alongside the dried for extra flavour.
If you have a smaller or larger can of chickpeas, that is fine too! Simply adjust the amount of herbs and spices accordingly.
Once cooled, store these in an airtight container.
I find they are most crunchy the same day you make them but can become a bit softer after that, especially if the container isn't airtight.
