Chocolate Coconut Energy Balls

No-bake bliss balls that are healthy and delicious!

This simple chocolate coconut energy ball recipe is super easy to make and is one of those amazing snacks that are healthy and taste good! Also known as bliss balls, protein balls and power balls, energy balls are great as a healthy go-to snack as they are full of positive carbohydrates, protein and fibre to help you through your day. Plus, as these are so delicious, you'll enjoy giving your body nutrition!

This recipe is my first time trying to make an energy ball of any kind, and I chose this as it was simple and had flavours I enjoyed. When looking through recipes, a lot required those niche 'healthy' ingredients that are not commonly found in the kitchen (at least mine anyway!) and so would require a special trip to the supermarket and a search online, meaning more money spent on the ingredients than just buying pre-made ones!


So instead, I chose this recipe as I, someone who likes to keep a budget with my baking, found the ingredients easy to find (I bought the dates on Amazon and the rest I already owned from the supermarket) as well as healthy and yummy for my taste buds. Plus, what is great about energy balls is that they are so versatile, so if you don't like this flavour combination, you can try something else! Serves: 12 - 15 Balls

Ingredients:


250g Medjool/Pitted Dates

125g Ground Almonds

50g Desiccated Coconut

70g Unsweetened Cocoa Powder

1 tsp Vanilla Extract

1-5 tsp Water (If Needed)

10-20g Desiccated Coconut For Dusting (Optional)



 

Method:

  1. Line a baking tray or plate with baking paper.

  2. Place the dates into a blender or food processor and blend until a thick paste.

  3. Add the ground almonds, desiccated coconut, cocoa powder and vanilla extract and blend until completely combined.

  4. If your mix still seems a bit dry, add 1-5 tsp water (one at a time!) until it is slightly sticky.

  5. Take a golf-ball sized amount of the mix and roll into a ball with your hands. Repeat until all the mixture is gone (12-15 balls).

  6. Optionally roll the balls in the desiccated coconut to coat.

  7. Place on the baking paper, making sure they're not touching so they don't stick together.

  8. Leave in the freezer for 15 minutes or the fridge for 30 minutes to firm up.

  9. Place in an air-tight container and keep in the fridge for up to 2 weeks or the freezer for up to 3 months.

  10. Enjoy!

 

My Tips:

  1. Make sure to use fresh dates for this recipe - not dried! This is because the dates provide the moisture and need to be sticky to keep the mix together. Medjool dates are ideal, but pitted dates will also do, you may just need to add a bit of water with these.

  2. If your mixture is still a bit dry and is not sticking together properly, try adding a small amount of water a little at a time until you get the right consistency. Don't make it too wet though as then it won't for uniform balls!

  3. If you don't have any ground almonds, you can always place some whole almonds into a blender or food processor and blitz until they become a powder.

  4. If you don't have a very powerful blender or food processor, try blending the dates as much as you can in the machine, then mixing the rest of the ingredients in by hand.

  5. When rolling your energy balls, don't worry if they're not perfect spheres! As long as you enjoy eating them, that's all that counts! If you prefer, you can also make them into squares or bars.

  6. These are great stored in the fridge for up to 2 weeks if you have a big family to eat them, but if it is just you, don't worry! Keep them in the freezer for up to 3 months and you can enjoy them whenever you like without having to worry about them going stale!

  7. If you don't like this particular flavour combination, you can try something different! Just remember to keep the same ratio of dates, nuts, and mix-in ingredients.
