Sweet and simple treats for coconut lovers!

One of the easiest sweet treats to make, coconut ice is a must-try! With only four ingredients, it's also economical and you can make it for far cheaper than buying a fancy box! If you like coconut, you'll love this simple recipe and as you can keep them for up to a month, you can always have some handy!

I love coconut ice, but it's always been more of a treat as it can be quite pricy. So, when I realised how easy it was to make it at home and how simple the ingredients are, I had to give it a go! For this recipe, I used half pink and half white to give it the classic look, but the great thing about this is that you can go for whatever colours you want! Plus, as you don't have to worry about cooking times, you can make as much or as little as you need, as long as you stick to the correct ratio of ingredients.

Ingredients:
250g Icing Sugar
250g Sweetened Condensed Milk
200g Desiccated Coconut
Pink/Red Food Colouring (Optional)
Method:
With a wooden spoon, mix together the icing sugar and sweetened condensed milk. Continue mixing until it gets stiff.
Add in the desiccated coconut and mix well.
If you would like it coloured, evenly split the mixture into two separate bowls and add some pink/red food colouring to one half, leaving the other white.
Dust a clean board or counter top with icing sugar and begin to shape each half into a smooth rectangle, both equal in size.
Place the white half on top of the pink half, then smooth until they are pressed together. This new rectangle with both halves of the mixture should be around 3cm thick.
Place on a dusted plate or board and leave uncovered to set for at least 4 hours or overnight.
Once set, carefully cut into equal squares.

Tips:
When mixing the icing sugar and condensed milk, at first mix slowly otherwise you will end up with a messy cloud of icing sugar everywhere! This mixture can also get quite stiff and hard to mix, so towards the end you will have to give it some elbow-grease!
You can make your coconut ice whatever colour you like! If you prefer to keep it white or just one colour, skip steps 3 and 5.
When creating the smooth rectangle, you can use either your hands or a rolling pin. When I was making it, I found it easier to use my (clean!) hands at first to get the general shape and then the rolling pin when pushing the two colours together. I then used my hands to straighten out the edges and make it into an even rectangle shape.
Also when making the rectangle, there is no right or wrong! As you don't have to worry about a specific size for cooking reasons like with normal cakes, if it is not exactly 3cm thick or it's not an exact size, it doesn't matter as you can still enjoy it!
I chose to cut mine into pieces that were about an inch square. This gave me around 24 pieces. You can also cut it into less for bigger pieces - it is up to you!
If you want a different amount, you can easily double or half the mixture.
You can store these in an airtight container for up to a month.
