These banana pancakes have become popular online and are all over social media and after a friend raved about how good they were, I had to give them a go! When I first started researching the best banana pancake recipe and how to make them, I was a bit unsure - I thought they'd be more like a strange banana omelette rather than pancakes or one of those healthy dishes that sound great but taste horrible - I was so wrong!
Not only are they amazingly simple and speedy to make, but they actually taste great as well! They have a similar texture and consistency to regular pancakes, but are a bit softer and with the obvious banana flavour. They are excellent for keeping me full for hours and are completely guilt-free. Plus, one of my favourite things about this banana pancake recipe is how versatile it is - not only can you enjoy the pancakes whenever you like such as for breakfast, brunch, lunch or just as a snack, but you can also add whatever toppings you like! I prefer adding berries and a bit of chocolate syrup, but you can add anything such as fruit, chocolate, maple syrup or sprinkles! You can also enjoy them plain!

Ingredients:
1 Medium Banana
2 Medium Eggs
Choice of Oil/Butter (For Frying)
Choice of Toppings (Optional)
Method:
Peel the banana and break up into a bowl. Mash until there are no big lumps.
Add the eggs and whisk together until combined.
Heat your choice of oil/butter (or substitute) in a frying pan on a low-medium heat.
Pour around 2-3 tbsp of the banana pancake batter into the pan.
Fry on each side for 1-2 minutes or until golden brown.
Plate up and repeat for the next pancake. This should make around 4 medium pancakes.
Stack up and add your choice of toppings or leave plain.

Tips:
You can easily alter the number of pancakes this recipe makes by doubling or halving the recipe. This should make 4 medium sized-pancakes, but you can make as many as you like!
I have found it best to use a slightly ripe banana as it is easier to mash up, but you can use them at whatever stage you prefer!
As this recipe is just banana and eggs, it is keto-friendly, gluten-free and vegetarian! It's also great for those looking to up their protein intake in a way that is easy and delicious and use eggs in a different form.
You can add whatever toppings you like! You can make it even healthier by adding fruit or make it a bit more fun by adding something like chocolate. Here are some popular topping ideas for you to try out in any variation you like:

You can also alter the recipe to make it more personalised! I like it simple with just the 2 ingredients, but you can try adding extra ingredients such as protein powder, oats or granola into the banana pancake batter. However, be aware that this may change the texture slightly.
If you prefer more American-style pancakes, add 1/2 tsp baking powder to your batter. This will make thicker and fluffier pancakes!
